Zucchini Bread
- 1 c. whole wheat flour
- 1 c. plain flour
- 1 1/2 tsp. baking powder
- 1 tsp. ground cinnamon
- 1/4 tsp. baking soda
- 1/4 tsp. salt
- 3 egg whites
- 1/2 c. oil
- 1 1/2 tsp. vanilla
- 2 c. zucchini, coarsely shredded and lightly packed
- Preheat oven to 350u0b0.
- Grease 9 x 5 x 3-inch loaf pan.
- Mix dry ingredients except sugar.
- Beat egg white until frothy.
- Add sugar, oil and vanilla.
- Continue beating for 3 minutes.
- Stir in zucchini; mix lightly.
- Add dry ingredients.
- Mix just until dry ingredients are moistened.
- Pour into loaf pan.
- Bake 40 minutes or until toothpick inserted in center comes out clean.
- Cool on rack.
- Remove from pan after 10 minutes.
- To serve, cut into 18 slices about 1/2-inch thick.

- 1 loaf, 110 calories per serving.
