Italian-Style Minestrone
- 1 large onion, diced
- 1 c. sliced celery
- 2 cloves garlic, minced
- 2 Tbsp. olive or vegetable oil
- 4 cans beef broth
- 1 (1 lb.) can Italian-style plum tomatoes
- 1 (15 oz.) can kidney beans, drained
- 1 (9 oz.) pkg. frozen Italian green beans
- 1 (10 oz.) pkg. frozen peas and carrots
- 1/2 c. uncooked macaroni
- 1/2 tsp. basil
- 1/2 tsp. oregano
- 1/4 tsp. pepper
- 2 small zucchini, sliced
- 1 can mushrooms
- Saute onion, celery and garlic in oil in a large kettle or Dutch oven until tender, about 5 minutes.
- Add remaining ingredients.
- Bring slowly to boiling.
- Reduce heat, cover and simmer 45 minutes.
