Italian-Style Minestrone

  1. Saute onion, celery and garlic in oil in a large kettle or Dutch oven until tender, about 5 minutes.
  2. Add remaining ingredients.
  3. Bring slowly to boiling.
  4. Reduce heat, cover and simmer 45 minutes.
