Fiesta Casserole

  1. Saute onion and garlic in salad oil in large frying pan until soft (not browned).
  2. Remove with slotted spoon to set aside. Shape ground beef into large patty and brown (in same pan) on both sides, then break into chunks.
  3. Stir in onion mixture, tomatoes, beans, chili, salt and pepper.
  4. Heat to boiling.
  5. Place 3 tortillas (cut in quarters) in 3-quart baking dish.
  6. Top with about one cup of sauce and repeat until all is used, ending with sauce.
  7. Sprinkle with cheese.
  8. Stick several wedges of tortillas on top.
  9. Bake in hot oven at 400u0b0 for 30 minutes.
