Apple Zucchini Pecan Bread

  1. In a large bowl, combine flour, baking soda, cinnamon, nutmeg and salt.
  2. In another bowl, beat eggs and add oil, sugars and vanilla.
  3. Pour over dry ingredients and mix well.
  4. Stir in zucchini, apples and pecans (batter will be stiff).
  5. Spoon into three greased 8x4x2" loaf pans.
  6. Bake at 350u0b0 for 50 to 55 minutes or until tests done.
  7. Cool in pan for ten minutes before removing to a wire rack to cool completely.
