Little Mountain Cake

  1. Measure 1/2 cup of the egg whites (about 4 whites) into large bowl of an electric mixer.
  2. With mixer at highest speed, beat whites until frothy, then gradually beat in 1/2 cup of sugar, one tablespoon at a time, until mixture will stand in stiff, but not dry peaks.
  3. Beat in the salt, vanilla and orange peel.
  4. Stir together the baking powder and flour until blended, then sift mixture over beaten whites; fold until smoothly blended.
  5. Fold in the butter until blended.
