Fudge Mocha Cheesecake

  1. Combine wafer crumbs, butter and powdered sugar.
  2. Butter sides and bottom of an 8-inch spring-form pan.
  3. Press crumb mixture evenly onto bottom of pan.
  4. Melt chocolate over low, but not boiling water.
  5. Stir until smooth.
  6. Add eggs, one at a time, to cream cheese.
  7. Gradually add sugar, mixing until well blended. Add melted chocolate, instant coffee and salt.
  8. Stir until blended.
  9. Turn mixture into prepared pan.
  10. Bake cake at 350u0b0 in center of oven for 40 minutes.
  11. Turn off oven and let cake sit in oven for 45 minutes.
  12. Cover and chill for at least 4 hours before serving.
