Crock Pot Lentil Beef Soup
- 3 lbs beef tips
- 1/4 cup flour
- 1 lb lentils, picked over & rinsed
- 1 small onion, chopped
- 2 carrots, peeled & diced
- 2 celery hearts, finely chopped
- 1 red bell pepper, chopped
- 1 (14 ounce) can diced tomatoes, with juice
- 3 tablespoons tomato paste
- 6 -7 cups chicken broth, low sodium
- 1 tablespoon thyme
- 1 tablespoon oregano
- 1 teaspoon cumin
- 1 teaspoon curry
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 dash cayenne
- Combine beef tips with flour in the crock pot.
- Add remaining ingredients & mix together.
- Cook on High for 6 hours.
- **To change it to a thicker consistency, which I prefer, take 4-6 cups without the meat (2 cups at a time) and blend in a food processor or with a hand blender.
- Cook on low for an additional hour.
