Fresh Apple Pound Cake

  1. Preheat oven to 325u0b0.
  2. Sift flour, soda and salt onto a platter or waxed paper.
  3. In a large bowl beat oil, sugar, eggs and vanilla at medium speed of electric mixer for 3 or 4 minutes until well blended.
  4. Gradually add flour mixture; beat until smooth.
  5. Fold in pecans and apples.
  6. Pour batter into greased and floured Bundt pan.
  7. Bake in a 325u0b0 oven for about 1 hour and 20 minutes, or until cake tests done.
  8. Cool on wire rack 20 minutes. If desired, dribble Brown Sugar Topping over warm cake, however, the cake is marvelous plain.
  9. Serve warm or cold.
