Baked Salmon Croquettes

  1. Drain salmon.
  2. Melt butter in heavy saucepan over low heat. Add onions and cook until tender.
  3. Add flour, stirring until smooth.
  4. Cook 1 minute, stirring constantly.
  5. Gradually add milk. Cook over medium heat, stirring constantly until thickened and bubbly.
  6. Stir in salt and pepper.
  7. Set aside.
  8. Remove skin and bones from salmon and flake salmon with a fork.
  9. Add lemon juice, 1/2 cup corn flakes and the white sauce, stirring well. Refrigerate mixture until chilled.
  10. Shape into croquettes.
  11. Roll in remaining corn flakes.
  12. Place on lightly greased baking sheet. Bake at 400u0b0 for 30 minutes.
