Sausage-Lasagne
- 1 lb. regular or hot sausage
- 3/4 c. chopped onion
- 1 whole garlic clove, minced
- 4 c. canned tomatoes
- 1/2 (small) can tomato paste
- 2 tsp. sugar
- 1/2 tsp. salt
- 1 pkg. Italian spaghetti sauce mix
- 1 lb. creamed cottage cheese
- 2 eggs
- 1 (8 oz.) can Parmesan and Romano cheese
- 8 oz. shredded Mozzarella cheese
- 8 oz. lasagne
- Break sausage in small pieces and brown slowly in a large iron pan.
- Remove sausage and drain, except for 4 tablespoons drippings. Add onions and garlic; simmer until tender.
- Return sausage; blend in tomatoes, tomato paste, sugar, salt and spaghetti sauce mix. Simmer uncovered for 30 minutes, stirring occasionally.
