Baked Mushrooms, Noodles And Ham Mornay
- 3 Tbsp. butter
- 3 Tbsp. flour
- 3 c. milk
- salt and freshly ground pepper to taste
- 1/8 tsp. ground nutmeg
- 1/2 lb. grated Cheddar cheese
- 1 c. heavy cream
- 1/4 c. finely chopped onion
- 1/4 lb. fresh mushrooms, cut into small pieces (2 c.)
- 1/2 lb. ham, cut into 1/2-inch cubes (2 c.)
- 3/4 lb. wide noodles
- 2 Tbsp. Port wine
- 1/4 c. Parmesan cheese
- Preheat oven to 450u0b0.
- Heat 2 tablespoons butter.
- Add flour; stir with wire whisk.
- When blended, add milk, stirring rapidly. Add salt, pepper, nutmeg and the cheese, stirring until melted. Add cream; bring to boil.
- Remove from heat.
- Melt remaining butter.
- Add onions, stirring.
- Add mushrooms; cook until wilted. Add ham; heat through.
