One-Dish Strawberry Pie
- 1 qt. strawberries, rinsed
- 1/2 c. biscuit baking mix
- 3/4 c. sugar
- 2 Tbsp. butter or margarine, softened
- 2 eggs
- 1 (12 oz.) can evaporated milk
- 1/8 tsp. red food coloring
- 2 tsp. vanilla
- whipped cream
- Preheat oven to 350u0b0.
- Reserve 1 cup whole strawberries for garnish; slice remaining berries.
- In a blender container puree enough berries to equal 1 cup liquid (1 3/4 cups sliced berries equals 1 cup pureed berries).
- Add biscuit baking mix, sugar, butter, eggs and evaporated milk to blender.
- Stir slightly to mix ingredients together.
- Blend on High for 1 minute.
- Stir in remaining sliced berries, food color and vanilla.
- Pour into a greased 9-inch deep dish pie plate.
- Bake for about 55 minutes or until a knife inserted in center comes out clean.
- Garnish with whipped cream and whole berries.
