Potato Lovers' Casserole
- 2 lb. frozen hash brown potatoes
- 1 c. butter, melted
- 1/2 pt. sour cream
- 1/2 c. chopped onion
- 2 c. grated Cheddar cheese
- 1 (10 3/4 oz.) can cream of chicken soup, undiluted
- 1 tsp. salt
- 3/4 tsp. black pepper
- 2 c. crushed cornflakes
- Preheat oven to 350u0b0.
- Place frozen hash brown potatoes in a greased 9 x 13-inch pan.
- Melt 1/2 cup of butter and pour over potatoes.
- Set aside.
- In a 2-quart bowl, mix sour cream, onion, cheese, soup, salt and black pepper.
- Pour over potatoes and mix well.
- Combine 2 cups of crushed cornflakes and the other 1/2 cup melted butter.
- Spread over potato mixture.
- Bake for 1 hour. Yield:
- 9 cups.
- Makes 18 servings (1/2 cup each).
