Apple Raisin Loaves

  1. Heat oven to 350u0b0.
  2. Grease and flour 2 loaf pans (9 x 5 x 3-inch) or 3 smaller loaf pans.
  3. In a large bowl, beat eggs, oil, apples, sugar, and vanilla on low speed, scraping bowl occasionally, 1 minute.
  4. Add flour, baking soda, baking powder, salt, cinnamon, and cloves.
  5. Beat on low speed, scraping bowl occasionally until moistened, about 1 minute.
  6. Then beat on medium speed 1 1/2 to 2 minutes.
  7. Stir in nuts and raisins.
  8. Spread in pans.
  9. Bake until wooden pick inserted in center comes out clean. (Allow 55 to 60 minutes for larger loaves and approximately 45 minutes for smaller loaves.)
  10. Cool 10 minutes; remove from pans. Cool on wire rack.
