Mary'S Banana Bread

  1. Sift flour, baking soda and salt together. Set aside.
  2. Mash bananas and set aside.
  3. Cream the sugar and shortening until well blended.
  4. Add eggs and mix well. Add buttermilk and vanilla; mix well.
  5. Add mashed bananas (about 1/2 at a time) and mix well after each addition.
  6. Add dry ingredients (about 1/2 at a time) and mix well after each addition.
  7. Add chopped nuts and stir in with spatula or spoon.
  8. Spray loaf pan with nonstick cooking spray and pour batter into pan.
  9. Bake at 350u0b0 for 45 minutes to 1 hour. (Toothpick inserted in center should come out clean.) Cool. Can freeze or refrigerate.
