Mary'S Banana Bread
- 1 c. granulated sugar
- 1/2 c. shortening (I use butter flavor Crisco)
- 2 eggs
- 3 medium ripe bananas
- 2 Tbsp. buttermilk
- 1 tsp. vanilla extract
- pinch of salt
- 1 tsp. baking soda
- 2 c. flour (all-purpose or unbleached)
- 1/2 to 1 c. chopped nuts (if you don't like or can't eat nuts, omit them)
- Sift flour, baking soda and salt together. Set aside.
- Mash bananas and set aside.
- Cream the sugar and shortening until well blended.
- Add eggs and mix well. Add buttermilk and vanilla; mix well.
- Add mashed bananas (about 1/2 at a time) and mix well after each addition.
- Add dry ingredients (about 1/2 at a time) and mix well after each addition.
- Add chopped nuts and stir in with spatula or spoon.
- Spray loaf pan with nonstick cooking spray and pour batter into pan.
- Bake at 350u0b0 for 45 minutes to 1 hour. (Toothpick inserted in center should come out clean.) Cool. Can freeze or refrigerate.
