Beef Fajitas
- 2 lb. skirt steak, trimmed
- 2 medium onions, cut into rings
- 2 medium green peppers, cut into strips
- 2 Tbsp. chili powder
- 1 tsp. cumin
- 1 can Dr. Pepper
- 1 Tbsp. salt
- 1 clove garlic, crushed
- 6 oz. lemon juice
- 2 Tbsp. sugar
- 1 Tbsp. oil (vegetable)
- Mix all ingredients except steak and garlic.
- Rub steak with garlic, then add to marinade mixture.
- Let set, covered, for 1 hour.
- Drain steak and grill with high heat.
- Cook, turning meat every 30 seconds until medium rare.
- Remove and set aside.
- Grill onions and peppers with 1 tablespoon oil in large frying pan until slightly tender.
- Slice steak into 1/2-inch strips across the grain.
- Add to onions and peppers; cook for 5 minutes more adding 1/4 cup of marinade to decarmelize pan.
- Serve with hot flour tortillas, cheese, lettuce, diced tomato, sour cream and salsa.
