Mega Tuna
- 1 (6 1/8 oz.) can solid white tuna in water, drained
- 1 (2 1/4 oz.) can sliced black olives, drained
- 1 head fresh broccoli, cut into small florets (approximately 3 c.)
- 1/2 c. grated low-fat Mozzarella cheese
- 1 tomato, chopped
- 4 green onions, chopped, or to taste
- 1/4 c. slivered almonds or unsalted sunflower seeds
- 1/2 c. low-fat or reduced calorie mayonnaise or salad dressing
- 3 Tbsp. skim or 1% milk
- 2 tsp. mustard
- 1/2 tsp. garlic powder
- 1/4 tsp. black pepper
- dash of hot pepper sauce
- In a large bowl, place tuna, olives, broccoli florets, cheese, tomato, onion and almonds or sunflower seeds.
- Toss lightly to mix ingredients.
- In a small bowl, combine mayonnaise or salad dressing, milk, mustard, garlic powder, black pepper and hot pepper sauce.
- Beat with a fork to blend.
- Pour over broccoli-tuna mixture; gently fold until ingredients are lightly coated.
- Chill well.
- To serve, eat as a salad or use as a sandwich filler in pita breads or buns.
- Makes 4 servings.
