Queso Fundido

• 2 oz. chorizo sausage
• 2 c. (8 oz.) shredded sharp cheddar cheese
• 1 c. (4 oz.) shredded Monterey Jack cheese
• 1/2 c. dairy sour cream
• 1 can (4-oz.) chopped green chili peppers, drained
• 1 to 2 Tbsp. finely chopped canned chipotle chili peppers in adobo sauce
• chopped green bell pepper, chopped seeded tomato, and sliced ripe olives
• tortilla chips

1. Cook sausage in a small skillet until no longer pink. Drain well on paper towels.
2. Combine cheeses, sour cream, and chili peppers in a large bowl; stir in cooked sausage.
3. Spread in a 1-quart baking dish.
4. Bake in a 375u0b0 oven for 20-25 minutes or till cheese is melted and bubbly, stirring once.
5. Top with chopped sweet pepper, tomato, and sliced ripe olives.
6. Serve immediately with tortilla chips.
7. Serves 8.
