Queso Fundido
- 2 oz. chorizo sausage
- 2 c. (8 oz.) shredded sharp cheddar cheese
- 1 c. (4 oz.) shredded Monterey Jack cheese
- 1/2 c. dairy sour cream
- 1 can (4-oz.) chopped green chili peppers, drained
- 1 to 2 Tbsp. finely chopped canned chipotle chili peppers in adobo sauce
- chopped green bell pepper, chopped seeded tomato, and sliced ripe olives
- tortilla chips
- Cook sausage in a small skillet until no longer pink. Drain well on paper towels.
- Combine cheeses, sour cream, and chili peppers in a large bowl; stir in cooked sausage.
- Spread in a 1-quart baking dish.
- Bake in a 375u0b0 oven for 20-25 minutes or till cheese is melted and bubbly, stirring once.
- Top with chopped sweet pepper, tomato, and sliced ripe olives.
- Serve immediately with tortilla chips.
- Serves 8.
