Beef And Broccoli

  1. Cut beef into strips 1-inch long, 1/4-inch thick and 1/2-inch wide; set aside.
  2. In a small cup, stir together stock, cornstarch, soy sauce and sherry; set aside.
  3. In a heavy skillet, heat 2 tablespoons oil until very hot.
  4. Add broccoli, then toss and stir for 2 minutes.
  5. Cover and cook for 2 minutes more over medium heat; remove to side dish.
  6. Return skillet to high heat and add remaining 2 tablespoons oil and heat until smoking hot.
  7. Add beef and cook 2 minutes.
  8. Stir in stock mixture and add along with broccoli.
