Beef And Broccoli
- 3/4 lb. beef tenderloin
- 1/2 c. beef stock
- 1 Tbsp. cornstarch
- 1 Tbsp. soy sauce
- 1 Tbsp. dry sherry
- 4 Tbsp. olive oil
- 1 lb. broccoli florets
- pinch of red pepper flakes
- salt
- Cut beef into strips 1-inch long, 1/4-inch thick and 1/2-inch wide; set aside.
- In a small cup, stir together stock, cornstarch, soy sauce and sherry; set aside.
- In a heavy skillet, heat 2 tablespoons oil until very hot.
- Add broccoli, then toss and stir for 2 minutes.
- Cover and cook for 2 minutes more over medium heat; remove to side dish.
- Return skillet to high heat and add remaining 2 tablespoons oil and heat until smoking hot.
- Add beef and cook 2 minutes.
- Stir in stock mixture and add along with broccoli.
