Light Cream Cheese Frosting
- 1/2 c. sugar
- 2 Tbsp. pineapple juice
- 1 egg white
- 1 (8 oz.) pkg. Nuefchatel cheese, softened
- 1/2 tsp. grated orange rind
- 1/2 tsp. vanilla extract
- 1/2 c. nonfat vanilla yogurt
- 1 1/2 Tbsp. honey
- 1 Tbsp. lemon juice
- 1/4 tsp. cinnamon
- 2 c. shredded carrots
- 1/2 c. raisins
- 1/4 c. canned unsweetened crushed pineapple, drained
- In a serving bowl, combine yogurt, honey, lemon juice and cinnamon into a smooth dressing.
- Add carrots, raisins and pineapple to dressing and stir gently, but thoroughly, until salad is uniform.
- Cover and chill for a minimum of 15 minutes.
- Toss again before serving and drain liquid, if desired.
