Yellow Squash Casserole
- 1 1/2 lb. yellow squash, sliced
- 1 medium onion, chopped
- 1 can cream of chicken soup
- 1 small jar pimiento
- 1 can sliced water chestnuts
- 2/3 c. milk
- 8 oz. sour cream
- 1/2 c. butter or margarine
- 1 pkg. chicken flavor stuffing mix (Pepperidge Farm or Stove Top)
- 2 c. grated Cheddar cheese
- chicken flavor
- Cook squash and onion in salted water until just tender.
- Mix together soup, pimiento, water chestnuts, milk and sour cream. Add to drained squash and onion.
- Melt butter and mix with stuffing mix and chicken flavor.
- Line casserole with 1/2 stuffing mix.
- Top with squash mixture.
- Top with Cheddar cheese and remaining stuffing.
- Bake for 30 minutes at 350u0b0.
- Travels nicely. Good hot or reheated.
