Cheese-And-Spinach Puffs
- 1 (10 oz.) pkg. frozen chopped spinach, thawed
- 1/2 c. chopped onion
- 1/2 c. water
- 2 eggs, slightly beaten
- 1/2 c. grated Parmesan cheese
- 1/2 c. shredded Cheddar cheese (2 oz.)
- 1/4 c. plus 2 Tbsp. commercial Blue cheese dressing
- 1/8 tsp. garlic powder
- 1 (8 1/2 oz.) pkg. corn muffin mix
- Combine first 3 ingredients in a small saucepan; bring to a boil and cook 10 minutes.
- Drain well and squeeze to remove excess liquid.
- Combine spinach mixture and remaining ingredients; stir well.
- Cover and chill 2 hours.
- Shape mixture into 1-inch balls and place 1 1/2 inches apart on lightly greased baking sheets. Chill at least 30 minutes before baking.
- Bake at 350u0b0 for 10 minutes; serve warm.
- Yield:
- 4 dozen.
