Ripe Banana Spice Cookies
- 1/2 c. Crisco shortening
- 1 c. packed brown sugar
- 2 whole eggs
- 1 c. mashed ripe bananas (2 to 3 medium)
- 2 c. all-purpose flour
- 2 tsp. baking powder
- 1/2 tsp. ground cinnamon
- 1/4 tsp. baking soda
- 1/4 tsp. ground cloves
- 1/4 tsp. salt
- 1/2 c. chopped walnuts or pecans
- 1/2 c. raisins
- In a mixing bowl, cream shortening and brown sugar.
- Add eggs, one at a time, and bananas; mix well.
- Combine dry ingredients. Add to creamed mixture and mix well.
- Stir in nuts and raisins. Chill (dough will be very soft).
- Drop by teaspoonfuls onto greased baking sheets.
- Bake at 350u0b0 for 8 to 10 minutes or until lightly brown.
- Yields 3 dozen.
