Pasta With Chicken And Sausage Sauce
- 1/2 lb. hot Italian sausage
- 1 1/2 tsp. olive oil
- 1 onion, sliced
- 3 garlic cloves, chopped
- 1 1/2 (28 oz.) can plum tomatoes, drained and chopped
- 1 1/2 tsp. basil
- 1/2 tsp. thyme
- salt and pepper
- 1 lb. boneless, skinless chicken thighs, cut in 1/2-inch strips
- 1/2 c. minced parsley
- 1/4 tsp. crushed red pepper
- 1/2 lb. dry pasta
- Cut the sausage into slices.
- Put the oil in a saucepan over medium heat.
- Brown the sausage.
- Add onion to pan and cook until soft, about 5 minutes.
- Add garlic and cook 2 minutes.
- Add tomatoes, basil, thyme and salt and pepper.
- Simmer, stirring occasionally, about 20 minutes.
- Add chicken, parsley and red pepper and simmer gently for 10 minutes.
- Season to taste.
