Chicken With Tomatoes
- 1 cut up chicken
- 3 Tbsp. olive oil
- 1/2 lb. mushrooms
- 1 bay leaf
- 1/4 tsp. thyme
- 3/4 c. chopped onion
- 1 1/2 tsp. chopped garlic
- 2 Tbsp. flour
- 1/2 c. white wine
- 1 c. crushed tomatoes
- 3/4 c. chicken broth
- 6 flat anchovies, chopped
- 24 pitted green olives
- Heat oil in skillet; fry chicken pieces.
- Add mushrooms; continue cooking.
- Add bay leaf, thyme and garlic, stirring so ingredients mix.
- Cook approximately 12 minutes.
- Sprinkle ingredients with flour; stir to blend.
- Add wine, tomatoes and broth; stir and bring to boil in separate pan.
- Pour over chicken in skillet.
- Add anchovies; simmer for about 5 minutes.
- Add olives; continue to cook 5 more minutes.
- Yields 4 servings.
