Chicken With Tomatoes

  1. Heat oil in skillet; fry chicken pieces.
  2. Add mushrooms; continue cooking.
  3. Add bay leaf, thyme and garlic, stirring so ingredients mix.
  4. Cook approximately 12 minutes.
  5. Sprinkle ingredients with flour; stir to blend.
  6. Add wine, tomatoes and broth; stir and bring to boil in separate pan.
  7. Pour over chicken in skillet.
  8. Add anchovies; simmer for about 5 minutes.
  9. Add olives; continue to cook 5 more minutes.
  10. Yields 4 servings.
