Low-Calorie Oatmeal Cookies
- 2 eggs, slightly beaten or 1/2 cup egg substitute
- low calorie sugar substitute (to equal 1/2 c. sugar; I used Sweet 'N Low)
- 1/3 c. packed brown sugar
- 2 Tbsp. margarine, melted
- grated peel of 1 Sunkist orange
- 1/3 c. fresh squeezed orange juice
- 2 c. high protein cereal (Special K)
- 1 1/2 c. quick oats, uncooked
- 3/4 c. flour
- 1 tsp. baking soda
- 1/4 tsp. salt
- 1/4 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- In a large bowl, combine eggs, sugar substitute, brown sugar and margarine.
- Stir in peel, juice, cereal and oats.
- Sift together remaining dry ingredients.
- Add to cereal mixture, blending well. Drop batter from teaspoon on lightly greased cookie sheets. Bake at 375u0b0 for 8 to 9 minutes. Cool on wire racks. Makes about 4 dozen cookies.
- Contains about 36 calories per cookie.
