Polish Cucumber Relish(From M.C.E.S.)
- 4 c. ground unpeeled cucumber (4 to 5)
- 1 c. ground green pepper (about 2)
- 1/2 c. ground sweet red pepper (about 1)
- 3 c. ground onion
- 3 c. finely diced celery
- 1/4 c. salt
- 3 1/2 c. sugar
- 2 c. white vinegar
- 1 Tbsp. celery seed
- 1 Tbsp. mustard seed
- 1 whole garlic, chopped
- Use coarse blade on grinder.
- Combine all vegetables.
- Sprinkle with salt.
- Cover with cold water.
- Let stand 4 hours.
- Drain in colander, pressing out all excess liquid.
- Combine sugar, vinegar, seed and garlic.
- Bring to boil.
- Stir in vegetables.
- Simmer 10 minutes.
- Pack in jars.
- Process in boiling water bath 10 minutes. Yields 5 to 6 pints.
