Supper Nachos
- 2 lb. ground round
- 1 large onion, chopped
- 40 oz. refried beans
- 2 (7 oz.) cans chopped green chilies
- 5 c. shredded Jack or Cheddar cheese
- 2 c. taco sauce
- 1/2 bunch chopped green onions
- small can chopped ripe olives
- 3 avocados, mashed
- 2 c. sour cream
- 8 c. nachos
- salt
- pepper
- parsley
- Brown beef and onion with salt and pepper; drain.
- Spread refried beans in a shallow 11 x 17-inch pan.
- Top evenly with meat, then green chilies with shredded cheese over chilies. Drizzle taco sauce over cheese.
- Bake at 350u0b0 for 30 minutes. Remove from oven and cover with onions (tops too) and chopped ripe olives.
- Heat 10 minutes more.
- Mound center with avocados; surround with sour cream and sprinkle with parsley.
- Quickly tuck nachos around edges.
- Serves 8 to 12.
