Joe'S Spaghetti Sauce
- 2 medium onions, chopped
- 1/4 green pepper, chopped
- 1 stalk celery, chopped
- 5 or 6 cloves garlic, peeled and chopped
- 2 tsp. oregano
- 1/2 tsp. basil
- 1/2 tsp. parsley flakes
- 1/4 tsp. black pepper
- 2 Tbsp. sugar
- 1/4 c. oil
- 1 lb. ground beef
- 2 cans tomato paste (12 oz. each)
- 2 to 3 c. water
- 1 large can tomato sauce
- In a large pot, on medium heat, heat oil and add onions, pepper, celery and garlic for a few minutes.
- Add oregano, basil, parsley flakes, black pepper and salt.
- Saute for 1 minute.
- Add ground beef, crumbling to break up the meat.
- Cook, stirring occasionally, until beef looses its pink color.
- Add tomato paste and mix well.
- Add tomato juice and mix.
- Add water and mix until desired thickness is reached.
- Add sugar and mix.
- Salt to taste. When sauce starts bubbling, reduce heat and simmer for 1 to 2 hours.
- Stir occasionally.
- Serves 6 to 8.
