Microwave Chicken A La King
- 4 Tbsp. margarine, divided
- 2 Tbsp. flour
- 1/2 c. chopped onion
- 1 c. chicken broth
- 1/2 c. heavy cream
- 1/2 c. frozen peas, thawed
- 8 drops hot pepper sauce
- 1 tsp. coarse salt
- 2 c. cooked chicken or turkey, cut into small pieces (warm or room temperature)
- Melt 2 tablespoons of margarine in large casserole dish. Whisk in flour. Add onion. Microcook (100%) uncovered for 3 minutes.
- Add 1/2 cup broth.
- Whisk until smooth.
- Whisk in remaining 1/2 cup broth and heavy cream.
- Stir in peas.
- Microcook (100%) uncovered for 8 minutes, whisking several times.
- Add pepper sauce, remaining 2 tablespoons margarine and salt. Stir until margarine melts. Add chicken. Serve over mashed potatoes, rice or toast.
- Serves 4.
