Baked Stuffed Peppers

  1. Cut a slice off the tops of the peppers.
  2. Remove the white pith and the seeds.
  3. Parboil the peppers for 3 minutes in boiling water; remove and drain.
  4. Heat the oil in a frying pan.
  5. Add the onion, garlic and grated courgettes (zucchini) and fry for 5 minutes.
  6. Add the mushrooms, then stir in the parsley, breadcrumbs, cheese, egg and salt and pepper to taste.
  7. Combine the ingredients thoroughly.
