Black And White Enchiladas
- 1 boiled chicken, boiled and chopped
- equal amount hamburger, browned well done
- 1 pkg. corn tortillas
- 1 can cream of chicken soup
- 1 c. chicken broth
- 1 c. sour cream
- 1 medium can chopped green chilies
- 1/2 c. chopped onion
- grated Cheddar cheese
- oil (for cooking tortillas)
- Mix chicken and hamburger together and set aside.
- Mix soup, broth, sour cream, chilies and onion together.
- Heat this mixture over low heat until smooth and very warm but not boiling.
- Using hot oil, quickly heat tortillas 6 to 7 seconds on each side.
- Put meat on tortilla.
- Cover with some sauce.
- Add small amount of cheese.
- Roll and place seam side down in pan.
- After all are done, pour remaining sauce over all and add a layer of cheese on top.
- Bake at 350u0b0 until cheese has melted good, 15 to 20 minutes.
