Prize-Winning Chili
- 3 medium onions, chopped
- 1 large bell pepper, chopped
- 2 (8-inch) stalks celery, chopped
- 1 Tbsp. jalapeno pepper
- 1 (14 oz.) can stewed tomatoes
- 1 (8 oz.) can tomato sauce
- 1 (6 oz.) can tomato paste
- 1 (3 oz.) bottle chili powder
- 1 tsp. cumin
- 1 Tbsp. Tabasco sauce
- 2 bay leaves
- 4 lb. ground chuck
- 4 oz. beer
- 2 (8 oz.) cans chili beans
- garlic salt to taste
- onion salt to taste
- salt and pepper to taste
- Saute onion, bell pepper, celery and jalapeno in a small amount of oil.
- Add the meat and braise.
- Drain.
- Mix in the remaining ingredients.
- Add enough water to cover the top of the mixture. Cook the chili for three hours over a low heat.
