English Cider Cake(Makes 8 Servings.)
- 1 1/2 c. cake flour
- 2 eggs
- 1 1/2 tsp. double acting baking powder
- 2/3 c. unfermented apple cider (no sugar added)
- 1 tsp. ground cinnamon
- 1 small apple (about 1/4 lb.), cored, pared and grated
- 1/8 tsp. ground nutmeg
- 2 Tbsp. plus 2 tsp. reduced calorie margarine (tub)
- 1 tsp. confectioners sugar
- 1 Tbsp. plus 2 tsp. granulated sugar
- 1/4 tsp. salt
- Into medium mixing bowl, sift together flour, baking powder and seasonings; set aside.
- Preheat oven to 375u0b0.
- In small mixing bowl, using mixer at medium speed, cream margarine with granulated sugar; add eggs, one at a time, beating well after each addition. Add egg mixture alternately with cider to flour mixture, stirring until batter is smooth.
- Fold in fruits.
- Line bottom of 7 3/8 x 3 5/8 x 2 1/2-inch loaf pan with paper.
- Pour batter into pan; bake for 40 to 50 minutes (until cake tester inserted in center comes out dry).
- Let cake cool in pan for 5 minutes, then remove to wire rack.
- Let cool 10 minutes longer.
- Using a sieve or tea strainer, sift confectioners sugar over loaf.
- To serve, cut into 8 equal slices.
