Spinach Quiche
- 1 deep dish pie crust (unbaked)
- 1/2 c. chopped onions
- 1/2 tsp. minced garlic
- 1 Tbsp. chicken broth
- 1 (10 oz.) pkg. frozen, chopped spinach, thawed and drained
- 4 Egg Beaters
- 1 c. skim milk
- 1 Tbsp. flour
- 1 tsp. basil leaves
- 1/2 tsp. dill weed
- 1 c. grated Mozzarella cheese
- 1/2 c. ham, cubed
- 1/3 lb. cooked, crumbled bacon (optional)
- Over medium heat, cook onions and garlic in chicken broth until golden.
- Add spinach and spoon into bottom of pie crust; set aside.
- In a bowl, combine Egg Beaters, milk, flour, basil, dill and cheese.
- Pour over spinach mixture.
- Bake at 350u0b0 for 45 to 50 minutes or until inserted knife comes out clean.
- Let stand for 10 minutes before serving.
