Fruit Cake
- 1 lb. cherries
- 3/4 lb. pineapple
- 1 lb. mixed fruit
- 1 lb. raisins
- 4 c. pecans
- 5 large eggs
- 3 1/2 c. flour
- 2 c. sugar
- 1/2 lb. butter
- 4 oz. sour cream
- 1 Tbsp. rum flavor
- 1 Tbsp. Port flavor
- 1 Tbsp. brandy flavor
- 1 tsp. vanilla
- 1 tsp. lemon extract
- 4 oz. cherry
- 1/2 tsp. soda
- 1 tsp. salt
- Pour cherry over fruit; let stand overnight.
- Cream the butter and sugar.
- Add sour cream; beat until fluffy.
- Add flavorings. Sift flour, soda and salt.
- Beat eggs.
- Add flour and eggs to mixture, beginning and ending with flour.
- Put 1/2 cup of the flour over fruit and nuts; blend until all fruit is coated.
- Pour batter over all.
- Mix until blended.
- Put into 2 loaf pans lined with wax paper.
- Bake in middle of stove at 250u0b0 for 2 hours and 20 minutes. Keep pan with water under cake.
- Let cool in oven.
