Zucchini Fruit Cocktail Loaf

  1. in a large mixing bowl, beat eggs.
  2. add sugar, oil and vanilla.beat well.
  3. stir in zucchini and fruit coctail.
  4. combine dry ingredients, stir into zucchini mixture.
  5. stir in nuts.
  6. pour into two greased and floured 8x4" loaf pans.
  7. bake at 325* for 60-70 minutes or until bread tests done.
  8. cool 10 minutes before removing from pans to wire rack.
