Buck-A-Roo Beef Skillet
- 1 lb. ground beef
- 3/4 c. chopped onion
- 1 (16 oz.) can tomatoes, cut up
- 1 (15 1/2 oz.) can red kidney beans
- 1/2 c. quick-cooking rice
- 3 Tbsp. chopped green pepper
- 1 1/2 tsp. chili powder
- 1/2 tsp. garlic salt
- 3/4 c. shredded mild Cheddar
- corn chips, crushed
- In skillet, cook ground beef and onion until meat is browned and onion is tender.
- Drain fat.
- Stir in undrained can of tomatoes, undrained kidney beans, uncooked rice, green pepper, chili powder, garlic salt, 1/2 cup water and 1/2 teaspoon salt. Bring to boiling; reduce heat.
- Simmer, covered, 20 minutes, stirring occasionally.
- Top with cheese.
- Cover and heat until cheese melts.
- Top with chips around edge.
