Country Swiss Steaks
- 1 (4 to 6 lb.) boneless roast beef
- 1 (16 oz.) can tomatoes
- 1 small can tomato juice
- 3 Tbsp. salt
- 3 Tbsp. black or white pepper
- 2 large onions, sliced thin
- 1 c. water
- 3 c. flour
- 2 c. cooking oil
- Slice the meat
- into steaks 1-inch thick, 3-inches wide and 5-inches long.
- Place
- the
- cooking
- oil
- in
- a frypan and heat. Roll the steaks
- in the flour.
- Remove and place in the frypan. Cook,
- turning
- occasionally
- until
- done
- and brown. Remove from frypan
- and
- place
- in a roasting pan.
- Cover with onions, tomatoes and tomato juice.
- Cover and bake in preheated 325u0b0 oven for 2
- to
- 2
- 1/2
- hours
- or until the steaks are tender.
- Mix 2 tablespoons
- of
- flour
- with a small amount of water.
- Make a smooth mixture and add to the steaks, stirring gently.
- Cook for another
- 5
- to 10 minutes and the steaks are ready to serve. Serves 6 to 10 people.
