Windows On The Water(Lobster-Stuffed Potato)

  1. Lightly coat potato skins with a small amount of olive oil and bake at 375u0b0 for an hour.
  2. Let cool, then cut in half and scoop out pulp into mixing bowl.
  3. Melt the butter in a saute pan and add the onion with a dash of salt and pepper.
  4. Saute until onion is translucent.
  5. Stir in lobster and wine and bring to boil, stirring frequently, until liquid is boiled away.
  6. Add sour cream and heavy cream and remove from heat.
  7. Combine pulp, lobster, cheese and scallion and mix well.
  8. Stuff potatoes skins with equal parts of the filling and bake at 400u0b0 until hot.
  9. Serves four.
