Windows On The Water(Lobster-Stuffed Potato)
- 4 large round white potatoes, scrubbed
- 1 small yellow onion, finely minced
- 1 lb. lobster meat, freshly cooked
- 1 c. dry white wine
- 1/4 c. sour cream
- 1/3 c. heavy cream
- 1/3 c. Jarlsberg cheese, grated
- 1/2 Tbsp. butter
- 1 scallion, diced
- salt and pepper to taste
- Lightly coat potato skins with a small amount of olive oil and bake at 375u0b0 for an hour.
- Let cool, then cut in half and scoop out pulp into mixing bowl.
- Melt the butter in a saute pan and add the onion with a dash of salt and pepper.
- Saute until onion is translucent.
- Stir in lobster and wine and bring to boil, stirring frequently, until liquid is boiled away.
- Add sour cream and heavy cream and remove from heat.
- Combine pulp, lobster, cheese and scallion and mix well.
- Stuff potatoes skins with equal parts of the filling and bake at 400u0b0 until hot.
- Serves four.
