Super Seafood Supper
- 1 1/2 lb. cooked, cleaned shrimp
- 1/2 lb. sea legs
- 1/2 lb. scallops
- 2 c. thinly sliced celery
- 1 c. thinly sliced green pepper
- 1 c. thinly sliced onion
- 1/4 c. butter
- 1/4 c. coarsely chopped pimento
- 1 pt. sour cream
- 1 c. light cream
- 2 Tbsp. lemon juice
- 2 tsp. Worcestershire sauce
- 1/2 tsp. salt and dash of pepper
- 1 qt. cooked rice
- 2 (4 oz.) cans mushrooms
- 1/2 c. dry bread crumbs
- 2 Tbsp. melted butter
- Cook
- celery,
- green pepper and onion
- in
- butter
- until partially cooked.
- Combine these with seafood and pimento.tix sour cream, light cream, lemon juice and
- seasonings
- in
- small bowl.
- Combine 3/4 cup cream mixture, ricetnd
- drained mushrooms.tSpread rice mixture evenly in well greased 15t
- 9 x 2-inch
- baking
- dish.
- Place seafood mixture ontop
- of
- rice mixture.
- Pour remaining 1/4 cup of cream mixture over seafood. Combine
- bread
- crumbs
- with remaining
- butter.
- Sprinkle
- over casserole and bake 30 to 35 minutes at 350u0b0.
- May be prepared a day
- aheadtnd
- refrigerated.
- Allow
- 30tinutes
- additional cooking time if refrigerated.
