Wheat Bran Cranberry Quick Bread
- 1/2 cup unbleached white flour
- 1 cup whole wheat flour
- 1 cup wheat bran
- 3/4 cup brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup chopped walnuts
- 1 cup dried cranberries
- 1 egg
- 1/2 cup milk
- 1 cup orange juice
- 1/3 cup vegetable oil
- preheat oven to 350 degrees.
- grease 9x5x3 loaf pan.
- in large bowl mix egg, oil, milk and orange juice.
- in separate bowl combine dry ingredients.
- add dry ingredients to wet slowly, folding till just mixed.
- pour batter into loaf pan.
- bake on center shelf for 55-60 minutes or until firm in center.
- cool in pan for 10 minutes before removing to bakers rack.
- let cool completely before slicing.
