Beef Macaroni Casserole
- 1 lb. ground beef
- 1/3 c. milk
- 2 eggs
- 1/2 c. ketchup
- 1/4 c. chopped onion
- 1 1/2 tsp. salt
- 1 (8 oz.) pkg. elbow macaroni, cooked
- 2 tsp. prepared mustard
- 1/4 c. chopped green pepper
- 1/2 c. mayonnaise
- 1 c. grated American cheese
- 1/2 c. dry bread crumbs
- 2 Tbsp. melted butter or margarine
- 6 slices tomato
- Mix beef, milk, eggs, ketchup, onion and salt.
- Set aside.
- Mix cooked macaroni, mustard, green pepper and mayonnaise.
- Spread this mixture in greased 2-quart baking dish.
- Spread beef mixture over top.
- Sprinkle with cheese; top with bread crumbs and butter.
- Bake at 325u0b0 for 20 minutes.
- Place tomato slices on top and bake 10 minutes longer.
- Makes 8 servings.
