Chocolate Caramel Cookies
- 1 Cup butter (no subs)
- 1 Cup and 1 Tbsp. sugar divided
- 1 Cup brown sugar, packed
- 2 eggs
- 2 tsp. vanilla
- 2 1/2 Cups all-purpose flour
- 3/4 Cup baking cocoa
- 1 tsp. baking soda
- 1 pkg. Rolo candies (13 oz.)
- 1/2 Cup chopped pecans (optional)
- Cream butter, 1 Cup of sugar and brown sugar in a mixing bowl.
- Add eggs and vanilla.
- Mix well.
- In a separate bowl, combine flour, cocoa and baking soda.
- Add to creamed mixture just until combined.
- Shape dough by teaspoonfuls around each candy. Combine pecans and sugar.
- Dip each cookie in half halfway.
- Place with nut side up on ungreased baking sheets.
- Bake at 375 for 7 to 10 minutes or until top is slightly cracked.
- Cool for 3 minutes before removing from sheet.
- Move to rack to cool completely.
