Aunt Sarah'S Chocolate Halfway Cookies
- 1 c. shortening
- 1/2 c. granulated sugar
- 1 1/2 c. packed brown sugar
- 2 eggs (separated)
- 1 Tbsp. cold water
- 1 (7 oz.) pkg. chocolate bits
- 1 tsp. vanilla
- 2 c. flour
- 1/4 tsp. salt
- 1 tsp. baking powder
- 1/4 tsp. baking soda
- Cream shortening and slowly add sugar and 1/2 cup of brown sugar.
- Add egg yolks and water and vanilla.
- Blend thoroughly. Mix flour, salt, baking powder, and soda together and add to shortening mixture.
- Spread evenly in 12 x 16-inch pan.
- Sprinkle with chocolate bits.
- Beat egg whites until stiff.
- Add remaining brown sugar and continue to beat stiff.
- Spread smoothly on top of chocolate bits.
- Bake at 350u0b0 for 30 minutes.
- Cool.
- Cut into squares.
- Remove from pan and leave uncovered to air overnight.
