Glorified Cabbage
- 1 medium cabbage, finely chopped
- 2 medium onions, finely chopped
- 1 green pepper, finely chopped
- 3 stalks celery, finely chopped
- 1/2 c. seasoned bread crumbs
- 2 pods garlic, minced
- 2 Tbsp. parsley, chopped
- toasted bread crumbs, soaked in milk
- 1/2 pt. half and half light cream
- 1/2 lb. cheese, grated
- 1 stick oleo
- salt and pepper to taste
- Parboil cabbage in slightly salted water until tender; drain. In cooking oil, wilt celery, onions and green pepper.
- Add cabbage and smother on low heat 20 to 30 minutes, stirring frequently. When cabbage is smothered, add cheese and continue cooking until cheese is melted.
- Add cream, butter and toasted bread crumbs, soaked in milk, keeping it moist.
- Before removing from heat, add garlic, parsley, salt and pepper.
- Place in large casserole dish and top with seasoned bread crumbs, tossed with more grated cheese.
- Bake at 350u0b0 in oven for about 30 minutes or until heated.
