Shrimp And Sausage Jambalaya
- 1 large yellow onion, chopped
- 1/2 c. chopped sweet green pepper
- 1/2 c. chopped celery
- 1/4 lb. hot sausage
- 2 Tbsp. margarine
- 1 1/2 c. rice
- 2 c. tomato juice
- 1 (13 3/4 oz.) can chicken broth
- 1 tsp. salt
- 1/2 tsp. leaf savory, crumpled
- 1/2 tsp. red pepper sauce
- 1 lb. shrimp
- 1/2 c. chopped green onion
- chopped parsley
- Saute onion, green pepper, celery and sausage in margarine in large pan for 5 minutes.
- Add rice and cook, stirring for one minute.
- Add tomato juice, chicken broth, salt, savory and pepper sauce.
- Bring to boil, then simmer until rice is almost done (about 10 minutes).
- Add shrimp and green onions until rice is done.
- Sprinkle with parsley or cilantro and serve.
