Old Fashion Beef Barley Soup
- 1 1/4 lb. ground meat
- 3 medium, chopped onions
- 3 medium, sliced potatoes
- 3 celery stalks, diced
- 3 medium carrots, diced
- 2 (16 oz.) cans whole tomatoes
- 16 oz. can whole corn
- 16 oz. can peas
- 16 oz. can French-cut string beans
- 2/3 c. pearl barley
- 6 c. water
- 3 Tbsp. beef bouillon granules
- 1 Tbsp. salt
- 1/2 tsp. oregano
- 1/2 tsp. thyme
- 1/2 tsp. black pepper
- 1/2 tsp. sweet basil
- 2 bay leaves
- Brown meat with onions.
- In large pan, put in browned meat with onions, water, potatoes, celery, carrots, tomatoes, barley and spices.
- Simmer 45 to 60 minutes.
- Add corn, peas and string beans; simmer 10 more minutes.
- Add all liquids from the cans of vegetables.
