Mushroom Macaroni
- 1 onion, chopped
- 1 lb. mushrooms, sliced
- 2 Tbsp. oil
- 1/4 lb. butter
- 3 Tbsp. flour
- 2 c. milk
- salt and pepper
- pinch of cayenne pepper
- 1/2 c. dry bread crumbs
- 1/4 c. grated Parmesan cheese
- 3 1/2 c. cooked macaroni (about 1/2 lb. dry)
- 3 Tbsp. chopped fresh parsley
- Heat oven to 350u0b0.
- Saute onions and mushrooms in 1 tablespoon oil and 3 tablespoons butter for about 15 minutes.
- Add another 3 tablespoons butter and stir until melted.
- Stir in flour until smooth.
- Gradually stir in milk.
- Add 1 1/2 teaspoons salt, 1/2 teaspoon pepper and the cayenne.
- Bring to boil and cook for 1 minute.
- Stir in macaroni and 2 tablespoons parsley.
- Put in a 2-quart casserole.
- Melt remaining 2 tablespoons of butter. Combine bread crumbs, Parmesan cheese, 1 tablespoon parsley, 1 tablespoon oil and the melted butter.
- Sprinkle on top.
- Bake until browned, about 25 minutes.
