Fruity Ham
- 2 to 3 lb. piece ham
- 1 orange
- 4 large cooking apples, chopped
- 1 small onion, finely chopped
- 2 celery stalks, thinly sliced
- 1 oz. dried apricots, chopped
- 1 tsp. ground mix spice
- 3 Tbsp. cider vinegar
- 1 Tbsp. mustard powder
- 1 Tbsp. clear honey
- Grate zest from orange slice flesh and put into casserole with zest, apples, onion, celery, apricots, spice and 2 tablespoons of the vinegar.
- Mix mustard with honey and remaining vinegar. Spread over ham and place in casserole.
- Cover tightly, cooking about 2 hours (or as specified on ham package) at 325u0b0.
- Remove ham.
- Keep warm.
- Press contents of casserole through sieve and reheat sauce gently in saucepan.
- Pour sauce into sauce boat. Serve with ham.
